These muffs were my first attempt to make japanese cheesecake using ricotta. My friends asked me to make cheesecake and ricotta was the only appropriate cheese I could get. So I inspired myself with Peach Japanese Cheesecake. And this is what I've got - 9 light airy cups iced with gentle orange syrup.

Ingredients

(A)
100g ricotta
1 tbsp + 1tsp oil
40ml milk

(B)
35g all-purpose flour
1/8 baking soda
7,5 g vanilla sugar

(C)
2 egg yolks
1/8 tsp salt
15 g fine granulated sugar

(D)
2 egg whites
25g fine granulated sugar

Syrup:

1 orange (pressed juice + zest)

1 tsp honey

1 tbsp sugar

1/4 tsp cinnamon

1/8 tsp ginger

80 ml Actimel

2 big apples cut into the thin sheets (a half of an apple will be used for decoration)

2 middle bananas, mashed (2/3 cup)

1 pckg baking powder

1 pckg vanilla sugar

1/4 tsp cinnamon

1/4 tsp backing soda

1/4 tsp salt

Crust:

1 tbsp fine sugar

1/4 tsp cinnamon

This is one of my basic muffin recipes. Good for delicious crust that makes up by itself.

260 grams all-purpose flour

1 pckg baking powder

1/2 tsp baking soda

1 egg lightly beaten

150 g sugar

100 ml sunflower oil

250 grams sour cream

(if sour cream is reach in fat reduce the quantity of oil and add a little bit of milk)

250 grams fruits

You may also use vanilla, nutmeg or cinnamon as well as lenom and orange zest.
